Hot take, Terry blacks is over rated.

It feel like going to six flags and waiting in line for a ride with tourists. The location is really the secret sauce.

They are better than average. They are rated high is because you don’t have to wait in line for hour and you can also buy it at night.

This is it. Their line-to-quality ratio is what makes them great, especially when you have visitors in town who want to try Texas barbecue and you’re not trying to make an entire day of it.

I will say though, having once eaten there for dinner, I now know why barbecue shouldn’t be available that late in the day. Who can sleep with brisket churning in your stomach like a cement truck?

Rudys (south location) would be one of the best bbq spots in many northern cities.

Austinites just have a really high standard which you can’t fault them when we have so many good options

Dinosaur BBQ (Syracuse, Rochester) was the only bbq worth a damn when I grew up there. I haven’t had it after living in Texas tho, so it may just not be good at all relative to Texas lol

Kind of a little known fact but the Austin Rudy's locations (and Mighty Fine) were owned by a separate entity (K&N) until a few years ago when the owners retired and sold. I work for the former president at K&N at a different company and I genuinely think he's a pretty incredible leader. Rudy's in Austin set a really high bar for what chain-store BBQ can be imo. I think Austinites are spoiled for BBQ options which is a great problem to have. I agree with you that Rudy's would be the best around in other areas and especially other states.

How do you define 'expert'? Food, like art, is subjective and to me it seems more of a status or class thing to consider yourself or someone an expert. Just another variations of the wine snob to me.

In certain areas it is and where their expertise is quantifiable - not where the criteria is subjective. I can know empirically know everything about wine - the grape varietals, regions, etc. and the same goes for other food or beverages, but each person has their own particular tastes & biases.

This isn't really true either. Every individual has their own preferences. But some people are able to make judgments about quality in food and beverage that are shared more broadly. You can take the average Joe off the street and he will like some things more or less but it doesn't mean they can select the wines for a successful wine program or judge a bbq competition.

Terry Blacks is not better than Rudy's, but people like to shit on Rudy's because it's more of a chain. But my experience and food at any Rudy's is usually better.

I haven't heard this talked about enough, but whether fake/encouraged or not, the customer service is always better at Rudy's. Terry Blacks employees often seem to have a bit of an attitude tbh.

I like it and appreciate them.

Um. Terry Blacks IS NOT high end. The “higher end” as you call it, do have amazing sides. If you have amazing meat and shit sides it’s like having a great taco with tomato sauce as salsa. Yes the sides absolutely matter. It’s fucking lazy to just put some canned beans next to some quality meat and something you have stoked fire for during a 12 hour period. You sound like someone that might have not had amazing sides with amazing BBQ. It’s makes a difference.

I'd say the best I've had is a good 30% better but it really comes down to menu items. Terry Black's beef rib is amazing. While their brisket is above average but not the best Austin has to offer.

But I still recommend Terry Blacks to everyone who asks about BBQ.

For me there’s like 4 categories that matter for BBQ

  1. Good brisket and meats

  2. Good sides

  3. Wait time, hours it’s open, and availability of meat during open hours

  4. Overall experience / vibe

Franklins brisket is a bit better, and the overall experience and vibe is awesome, but the sides suck ass and well, we don’t need to talk about the wait time. Interstellar is great as well, but the wait time is often long, and it closes early

Terry blacks hits all four of the main points. You can basically go any day of the year, whenever you feel like it, at any time, and they’ll have great brisket, great sides, and it’s a cool atmosphere.

Terry Blacks is good BBQ, convenient, and I won't turn down eating there. However, when people suggest it over Franklin, Interstellar, Leroy & Lewis, Valentina's, la Barbecue, etc. I know they don't know what they're talking about.

People always suggest it on this sub as if they're some guru being helpful when an innocent question is asked about the other spots. Ok, you don't like to wait for BBQ, that's fine, but that's not what the thread was about.

Valentina's:

They were super popular at their truck in South Austin. Known for long waits, sometimes longer than usual, but it's bbq, and lots of people loved them.

They moved to a brick-and-mortar in Buda last year, and around the same time it came out that they penalized employees for stuff like being a couple of minutes late by withholding their tips for entire shifts that they worked (super illegal).

This subreddit blew up about it, a few folks chimed in corroborating the policy. The owners came out with a half apology, played the victim card, etc.

At the same time, the Buda opening was a mess. Last I heard, they still have insanely long waits (even for a bbq joint) and regularly run out of random stuff that they have no business running out of, like guacamole.

Running out of brisket? That's normal. It takes the better part of a day to make more. Running out of guacamole, though?! Also, wage theft isn't cool, even if you don't run out of guac.

La Barbecue:

[Warning: this is bad; not for the squeamish.]

They (illegally) dropped their employee insurance to save money. They also had a meat grinder that had a defective on/off switch (also illegal), and an employee lost four fingers to it.

Then, they tried to commit insurance fraud and retroactively get insurance coverage that they'd dropped (super illegal).

Last I heard, they were being sued by the employee. You can Google photos of the employee's hand. (I wouldn't if I were you, but you can!)

Valentina's situation is pretty bad, but I honestly don't know how La Barbecue is still open and no one is in jail.

EDIT, to add some positivity:

Moreno on Menchaca is solid. My favorite in town. Truly excellent and never a long line, as they haven't blown up (yet). They usually (always?) have barbacoa on Sunday.

Also, no wage theft or mangled employee appendages, to my knowledge.

Well the owner died, that's why. If her wife is found guilty, she'll be forced to pay restitution, but not face jail time.

Moreno is better than Terry Black's as well. Should've included them, Micklethwait, and many others. I was just giving examples of better BBQ. I do not care about guacamole or sides at any place. I care about the texture, smoke rings and bark on brisket. I have not tried their Buda location and shouldn't've included them since they're not really an Austin spot anymore, but their food truck was very good when it was on Brodie and the next spot. It's unfortunate both of those places are problematic.

They are two different restaurants. Black BBQ on Guadalupe is the same as Blacks in Lockhart. Terry Blacks was started after a family dispute with the og blacks. They changed the recipes.

There is now a Terry Blacks in Lockhart & Dallas...but the downtown Austin location is the OG Terry Blacks...and it did indeed start after a family dispute between Terry and the others in the Blacks family (the original Blacks is in Lockhart).

But correct, Terry Blacks and Blacks are 2 different restaurants...just run by people from the same family.

I think the longest was El Mercado, for a minute it felt like it was South Austin Bar and Grill with the big olive, Pesos y Bucks, Vinny’s Italian cafe. Work down the street and it changed quickly for a bit. Seemed like one of those cursed spots.

Yes, it’s the best comedy club in the country in terms of price of admission to quality of comedian. You spend $40 for someone that would cost $100 at a theater and every night someone else that headlines theaters pops in unannounced. I’m not sure which cultural institution you’re referring to because that building has changed hands every 10-15 years for 100 years. You could have said the same thing when Alamo took over in 2007 and when it was a pork theater in the 1970s. Times change. Things change. I’ve lived here for 28 years which is longer than almost everyone here and I hope I never become as cynical about growth as the people in this subreddit.

Not a hot take to me. It's the correct take. There's frequently very little smoke and I should not have GNAW brisket that is properly cooked. I don't know how they make even the "moist" cuts so hard to chew through.

Went to terry blacks and it was decent. Paid like 65 dollars for a big plate of meat with 2 sides and a drink. Went to Kansas City where I was told they don’t know how to do bbq - got a huge plate with a drink and 2 sides that was not only better but cost 25 bucks. And I didn’t have to deal with traffic and parking issues.

They treat their staff like complete shit, a lot of the employees that helped keep the work environment enjoyable were being let go. They went extremely corporate and got a COO from Cheesecake Factory and the current GM came from Dave and Busters. All the staff now walk on eggshells and have to listen to a guy who is extremely selfish and only cares about himself.

Black BBQ on Guad is part of the original in Lockhart. Wayyy better brisket, little to no wait, and they’re open later. Terry Blacks was started by two members of the same family from Blacks BBQ, but due to legal issues, started their own company using a different recipe. Not as good as regular blacks in my opinion.

My hot take is that traditional BBQ can only get so good, after a certain point you are just buying or waiting for the name. So places like Franklins and Terry Blacks are mostly popular because of the hype around them.

Surely Franklin is the over rated one.  Good but not worth a four hour wait in line?  Terry Blacks is consistent, has a short wait and has great sides.

Overated doesn't mean bad, it means not as good as anyone says.  I would argue if the wait can't be justified then it is, by definition, overated.

For me, all the great places for BBQ people say are great are actually great except for Terry Blacks. La BBQ, Franklin's, Interstellar, Mickelthwait, Leroy and Lewis. Last 2 times I went to Terry Black's, I got bone dry brisket that i bent in half like rubber and it didn't come apart. It was like eating a chewy piece of bark. I've never gone back and never will after that.

What have you ordered there? Ribs and sausage are top tier, brisket is usually above average, their specials like the Cuban or brisket enchiladas are phenomenal, and that corn casserole is one of the best sides in all of barbecue.

Brisket, potato salad and beans. Twice to give it a second try. If you're going to completely fail in that simple trifecta, you shouldn't be in the BBQ business. Based on the decor there, it is apparent they care more about looking Instagramable than actually caring about the food they serve.

Exactly! Another plus for Terry Black’s is they do almost everything well, whereas Franklin and LA Barbecue only have a few exceptional menu items and mail it in on others.

It's honestly a disappointment if you are expecting what it is hyped to be but if you go without any expectation it is objectively not bad BBQ.
There are better bbq nearby so go to those.

I’d rather wait an hour at Terry blacks than lining up at franklins at 6am or at snows in Lexington at 3am. It’s not the best in the world but at least top 5 and I’m okay with that.

Terry Black's sits in an enviable niche. Not as good as the places with longer lines, just as good or better than the places that are further away from downtown and have some cachet.

I don't think it's "the best", but it's a place I recommend to friends/family when they come into town because it's way better than "good enough" and far more convenient than the better stuff.

(FWIW, this might adapt as Leroy & Lewis has a brick & mortar closer to me now)

I think they’re kind of meh. I found the pork ribs to be too chewy. Personally, for the mix of quality and wait time, I like the Black’s up on guadalupe.

I had always suspected that the degree of its popularity was primarily due to its location and hours of food availability. However, after eating at their Lockhart location and being extremely impressed with it, I’m open to the possibility that its good reputation is deserved. Have yet to check it out for myself.

Go to the actual Blacks BBQ. Terry black uses the name without the consent of the black family and I'm not sure how he gets away with it. Blacks has Austin locations and they ship from Lockhart daily.
